Pâtisserie Sadaharo Aoki in Paris: The Japanese/French pastry mix

Sadaharu Aoki is a Japanese pastry chef who came to Paris in 1991, after studying at prestigious cooking school in Machida, Tokyo. In the same city he finished his training as pastry chef in the Chandon bakery, also located in the Japanese capital, where he acquired knowledge that he then implemented in the bakeries that he opened in Paris.

Once settled in Europe, he began working in several restaurants, including Jean Millet and Couderc in the French capital and the Giradet restaurant in Switzerland. In 1998 he opened his first workshop and began to prepare sweet for tea rooms, hotels, receptions, his name began to resound loudly at all city events.

The originality of his recipes and creations began to grow when the great couturiers began to enjoy them and soon brands like Kenzo, Yohji Yamamoto, Ungaro and Christian Dior began to request them for their presentations.

During the following years, the merger between Japanese culture and their newly acquired French side went further and further, thanks to the opening of new stores and places where you can enjoy these little culinary wonders.

Talking Aoki Creations is talking about all his previous experience, everything that has managed to learn throughout his careers and training in the traditional cuisine of the country and what he has learned  during his stay in France.

Proof of this is the presentation of many of his sweet, combining the simplicity of Japanese traditional desserts with french delicacy. Small colorful shapes and sweet with a flavor that awakens the palate, bringing new nuances to common ingredients. Innovation is constant and can be seen in any of the stores that he has opened in Paris or in his own country, which also has become a benchmark in the pantry.

The greatest proof of this are his macaroons, French sweets he has become authentic delicacies, experimenting with textures, ingredients and flavors. They are the kings of any pastry gala, at Aoki stores they become one of their biggest sellers.

Its flagship product could be a cross between a chocolate and bonbon macaroon, surprising you with its texture, which hides an intense and very tasty flavor . Chocolates with layers of colored sugar are another of his specialties not to be missed.

The four stores are located in Segur Paris, at 25 rue Pérignon, at 35 rue de Vaugirard, another at 56 boulevard de Port Royal, and finally, in a corner that opened a few years ago at the Galeries Lafayette, the mythical galleries located near the Paris Opera.

These shops are very popular with visitors in the City of Light, prices are within everyone´s reach, another treat considering his products are amongst the top luxury pastry produce in the world
